The Outwalker team of free spirits brings together a wide range of backgrounds, skills and experience – all united by a shared passion for Irish whiskey.
Regularly ranked among the world’s best drinks creators, Jillian is known for her inspired menus, flawless bartending technique and encyclopaedic knowledge of spirits. To date, she has co-authored three books on cocktails and Irish whiskey, including most recently, Paddy Drinks: Modern Irish Whiskey Cocktails. With Sean she is currently planning the opening of their own eagerly awaited bar, Hazel & Apple in Charleston, South Carolina.
Sean was the creative driving force behind New York’s famous Dead Rabbit, which opened in 2012 and would go on to win every major accolade, including World’s Best Bar (twice). An acknowledged expert on Irish whiskey and hospitality, Sean has co-authored five books on various aspects of these subjects. A high-school dropout in his native Belfast, Sean is currently completing a Bachelor’s degree at Harvard while working with Jillian on their bar, Hazel & Apple.
Adrian has enjoyed a long and highly successful career as a hotelier, running some of Ireland’s most iconic venues, including the five-star Merchant Hotel in Belfast. A passionate entrepreneur – and lifelong whiskey aficionado – he has also owned numerous hospitality businesses including several restaurants and premium bars.
